Comprei a revista Gula n\u00ba 218 pensando na costelinha barbecue da capa e encontrei um artigo da Juliana Motter, do Maria Brigadeiro, de S\u00e3o Paulo, ensinando a fazer alguns sufl\u00eas &#8220;infal\u00edveis&#8221; de chocolate. Resolvi tentar a parte do &#8220;infal\u00edveis&#8221; dele, j\u00e1 que o meu forno \u00e9 tudo o que um sufl\u00ea detesta. Resolvemos pular para o &#8220;Sufl\u00ea de chocolate amargo&#8221;. E juro que foi realmente infal\u00edvel! Todo mundo gostou.<\/p>\n<h3>Ingredientes:<\/h3>\n<p>30g de chocolate amargo<br \/>\n30g de cacau em p\u00f3<br \/>\n120ml de \u00e1gua<br \/>\n1 gema<br \/>\n20g de amido de milho (maisena)<br \/>\n6 claras<br \/>\n90g de a\u00e7\u00facar<\/p>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignright\" style=\"margin: 10px; border: 1px solid black;\" src=\"http:\/\/farm4.static.flickr.com\/3389\/5794699607_fe70b092e0_m.jpg\" alt=\"141. Sufl\u00ea de chocolate amargo\" width=\"240\" height=\"166\" \/><\/p>\n<p>Primeiro, pique o chocolate em peda\u00e7os pequenos. Nos 120ml de \u00e1gua, dissolva o cacau em p\u00f3 e leve ao fogo baixo at\u00e9 ferver. Jogue este chocolate quente sobre os peda\u00e7os de chocolate amargo e misture at\u00e9 derreter tudo. Quando esfriar, junte a gema e o amido de milho.<br \/>\nBata as claras at\u00e9 ficarem espumosas, junte um ter\u00e7o do a\u00e7\u00facar, bata mais, at\u00e9 ficarem brilhantes, misture o resto do a\u00e7\u00facar, e bata at\u00e9 ficarem firmes. Misture essas claras em tr\u00eas vezes com o chocolate u<\/p>\n<p>sando uma esp\u00e1tula.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignleft\" style=\"margin: 10px; border: 1px solid black;\" src=\"http:\/\/farm6.static.flickr.com\/5188\/5794698005_97defa7c24_m.jpg\" alt=\"141. Achei que era firula, mas faz toda diferen\u00e7a polvilhar os ramequins com a\u00e7\u00facar! Distribua o sufl\u00ea entre os potinhos, nivele a superf\u00edcie com a esp\u00e1tula e asse por 15 minutos. Ao tirar do forno, <span style=\"color: #888888;\"><em>run, Forest, run<\/em><\/span>, polvilhe com a\u00e7\u00facar e sirva antes que ele diminua de tamanho! Ele n\u00e3o murcha daquele jeito feioso, de virar do avesso, mas diminui um pouco de tamanho, o que \u00e9 normal.
